Method of Production:

Harvested at different times - Malvasia-Fina and Cerceal-Branco the earliest, typically co-fermented, while Encruzado is fermented separately. Hand-picked grapes are destemmed and sent to a pneumatic press, with the free-run juice cold-settled for 24 hours. Fermentation occurs in temperature-controlled stainless-steel vats at 18–20ºC. After fermentation, the wine is racked off the lees, avoiding malolactic conversion to maintain fresh acidity. It ages for about six months in stainless steel before light fining and filtration prior to bottling.

This mountain influence allows a slower grape maturation, resulting in a wine style that’s both elegant and expressive. Guided by winemaker Tiago Macena, No Rules Wines champions minimal intervention to reveal the true character of the Dão’s indigenous grape varieties, such as Malvasia-Fina, Encruzado, and Cerceal-Branco. Each wine reflects the region’s distinct minerality, balancing a crisp acidity with a bright fruit profile that’s both structured and approachable. No Rules Wines aims to capture the Dão’s essence, crafting wines that are fresh, vibrant, and perfect for sharing, while offering an authentic taste of Portugal’s rich wine heritage.
