Method of Production:

The Maturano is hand harvest on the estate of I Ciacca in early October. A soft maceration with stems then left to rest at low temperature for 3 days. A single starter from the same grapes is prepared and combined with pressed must to start a slow fermentation no more than 18°C lasting 20 days+. Then wine is left to rest in cement vats on fine lees for 9 months with a final resting in bottle for 12 months before release.
