Method of Production:
Harvested at different times - Malvasia-Fina and Cerceal-Branco the earliest, typically co-fermented, while Encruzado is fermented separately. Hand-picked grapes are destemmed and sent to a pneumatic press, with the free-run juice cold-settled for 24 hours. Fermentation occurs in temperature-controlled stainless-steel vats at 18–20ºC. After fermentation, the wine is racked off the lees, avoiding malolactic conversion to maintain fresh acidity. It ages for about six months in stainless steel before light fining and filtration prior to bottling.
