Method of Production:

Each grape variety is picked at optimal ripeness, with Jaen being the earliest and Touriga Nacional the latest. After careful hand-picking, grapes are destemmed and fermented separately. Fermentation occurs in stainless-steel tanks at controlled temperatures of 26–28ºC, followed by malolactic conversion. The wine matures in concrete vats for around 24 months before light fining and filtration, resulting in a harmonious blend.
