Bright ruby red with a fine and rich voluminous moussette. On the nose, the wine is rich with sweet red berry aromas bursting out of the glass. It is lively and pleasantly harmonious, with rich dark fruits and cherry aromas. The wine is sweet, fresh, lively, persistent, and mellow. Nice violet and rhubarb notes with a hint of overripe red apple. Clean and balanced with a flavor intensity to admire!

Method of Production:
The grapes are softly pressed with stems, then left to rest at low temperatures to aid decantation. A single starter from the same grapes is prepared and combined with the pressed must, which is transferred to our concrete tanks to start a naturally spontaneous, slow fermentation at no more than 18°C, lasting 20+ days. The wine is then left to rest in cement vats on fine lees for 9 months before being bottled and aged for 12 months before release. There is no wood aging involved in this process.

Story of the wine:
It is now surely the time for Lambrusco to return to its origins, which is a dry, fully sparkling red wine. The multi-award-winning Quercioli is a wine that has been made by Medici Ermete with a view to returning the reputation of Lambrusco to its former glory. It is a single-vineyard wine with lower yields to enable greater concentration and depth. The Lambrusco (Italian for ‘wild grape’) variety is really a group of six varieties found mostly in Emilia. The Salamino variety is the most widely planted and is generally the most full-bodied and aromatic of the Lambrusco varieties. Within the estate is an old Franciscan monastery that has been preserved, and probably part of the estate formerly belonged to this monastery. Interesting fact: there is no such thing as white Lambrusco, only red! This wine wins lots of awards every single vintage since 2004!
