This wine was skin-fermented for 90 days in temperature-controlled stainless steel with native yeasts, enhancing its unique character. Gentle pump-overs every 4 days kept the cap wet and prevented contamination. After fermentation, the wine was naturally decanted and bottled without filtration, preserving its purity and complexity.
